Healthy Homemade Cabbage Soup Recipe for Weight Loss
Instead of serving your dieting family or friends canned soup that is full of calories, prepare a batch of homemade cabbage soup using ingredients found at your local grocery store or farm market. Cabbage soup is delicious, offers many healthy benefits such as high fiber and antioxidants and is low in calories.Things You'll Need
- Cooking spray/margarine
- 6 onions, sliced
- 2 green peppers, chopped
- 3 carrots, sliced
- 1 small can mushrooms
- 1 head celery, sliced
- 1/2 head cabbage, chopped
- 12 cups water
- 2 cans diced tomatoes
- 1 package dry soup mix, any flavor
- Seasonings (salt, pepper, Italian spices, garlic powder, etc.)
Instructions
Spray the inside of a large pot generously with cooking spray. Use 2 tablespoons of margarine in place of cooking spray if it is unavailable.
Add sliced onions and chopped green peppers to the pot and saute on medium heat.
Place the sliced carrots, mushrooms, celery and cabbage into the pot and continue cooking for 5 to 10 minutes or until all of the vegetables are soft.
Mix the water, canned tomatoes and dry soup mix in a separate bowl. Pour the liquid mixture over the sauteed vegetables.
Add your choice of seasonings to the soup and stir to combine the broth and vegetables. Cook the soup on low heat for two to three hours. Serve homemade cabbage soup with whole wheat breadsticks or crackers.
