Blackstrap molasses, the lowest grade of molasses available and the darkest, is the final byproduct of the sugar cane refining process. Made during the third time sugar syrup is boiled to crystallize the sugar's sucrose, this molasses is the most concentrated of the three and retains the most vitamins and minerals, including iron, calcium, magnesium, potassium, vitamin B and chromium. Though less sweet than the other two grades, blackstrap adds a sweet, bitter flavor to baked beans, gingerbread and barbecue sauce. It is available in stores and online.

Look for blackstrap molasses at your local grocery store. The lighter grades of molasses are sweeter, so some grocery stores may carry only grades one and two. However, as more buyers become aware of the health benefits of blackstrap, more grocery store chains will likely carry it.
