Juicing Beet & Carrot Greens: Benefits & Recipes
Juicers can extract juice from nearly any fruit or vegetable, including the greens of beets and carrots. Beet greens have plenty of nutrients like chlorophyll and vitamins A and C. Carrot greens have chlorophyll, vitamin K and potassium. Beet greens are commonly used both for cooking and juicing, whereas carrot greens are lesser known. It is best to juice both carrot and beet greens in moderation because they are so potent. Dilute the juice with carrots, apples, ginger, beets or other vegetables.Things You'll Need

Instructions
Wash the vegetables. Trim off and discard any wilted leaves.
Cut the leaves and any other vegetables into 1- to 2-inch pieces so they fit easily into the juicer.
Put the greens into the juicer tube and push them down with the depresser while the machine is on.
Run any other vegetables through the machine after the greens have gone through. This helps work any greens that are still in the juicer through the machine. Apples, beet and carrot roots, and ginger are good additions to this mix.
