HCF Diet: A Diabetes-Friendly Approach by Dr. James Anderson
The HCF, or "high carbohydrate high plant fiber diet," is a plan developed by Dr. James Anderson for the purposes of living with and improving diabetes. The diet focuses on "natural" sources of fiber and carbohydrates and restricts sugar and protein consumption.-
Carbohydrates

According to Dr. Anderson, the majority of a diabetic's calories -- 50 to 55 percent-- should come from complex carbohydrates. These include a variety of cereal grains, vegetables and legumes. From these sources of carbohydrates, it is recommended that dieters consume 25 to 50 grams of fiber per day.
Fat and Sugar

Both fat and sugar are heavily restricted in this program, particularly in the forms of saturated fat and refined sugar. The diet allows for 12 to 16 percent of calories from lean protein sources and 30 percent from fat. Unsaturated fat is recommended.
Potassium

Dr. Anderson recommends that diabetics consume a diet rich in various sources of potassium. Potassium intake naturally improves insulin responses.
