Understanding & Cultivating Cheese Mold: A Beginner's Guide
Fungus that grows on food is called "mold." Fungi feed off various plants and foods to obtain the nutrients that it needs to survive. Some fungi, specifically "penicillium" do well when attached to cheeses. Most cheeses will support mold and, in fact, some cheeses (Stilton, Roquefort, blue and Gorgonzola) are produced through the use of specially cultured molds. For individuals who wish to create a cheese mold as an experiment or to observe the molding process, there are several ways to speed up the process of creating moldy cheese.Things You'll Need

Expose the cheese to air or moisture.
Expose the cheese to warm temperatures.
Use cheese that does not contain any, or many, preservatives.
Use soft cheeses (cream, cottage, ricotta and quark, Brie and Camembert) which are more prone to hosting quickly growing molds.
