Food Poisoning Bacteria & Refrigeration: Understanding Safe Temperatures

Food poisoning bacteria can survive at temperatures below 5°C (41°F), although their growth is slowed down significantly. Some bacteria, such as Listeria monocytogenes, can even continue to grow slowly at refrigeration temperatures. This is why it is important to keep food refrigerated below 4°C and consume it as soon as possible. Any cooked food left out at room temperature for more than two hours should be discarded.
