Why do the surgeons on wear green scrubs and doctors blue?

This is actually a myth. Despite what we see on TV, there are no industry-wide standards regarding the colors of scrubs worn by surgeons and doctors. In fact, the colors of scrubs typically vary between different hospitals and clinics. While you might see some surgeons wearing green, you might see others wearing blue or even another color entirely.
