Diabetic-Friendly Coconut Cake Recipe: Almond & Coconut Flour
Ingredients- 1 1/2 cups almond flour
- 3/4 cup coconut flour
- 2 tbs ground flax seed
- 2 tsp baking powder
- 1/2 tsp salt
- 1/4 cup erythritol or Swerve sweetener
- 1/4 tsp vanilla extract
- 1/4 cup melted butter
- 2 eggs
- 1/4 cup unsweetened almond milk
Instructions:
1. In a medium bowl, whisk together the almond flour, coconut flour, ground flax seed, baking powder, salt, and erythritol or sweetener.
2. In a separate bowl, whisk together the vanilla extract, melted butter, eggs, and unsweetened almond milk.
3. Add the wet ingredients to the dry ingredients and mix until well combined.
4. Pour the batter into a greased 9x13 inch baking dish and bake in a preheated 350°F oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
5. Let the cake cool completely before serving.
