Why is there white stuff in center of ham?
It is most likely crystallized phosphate.
Phosphates are used for several reasons when processing hams; one is to aid in keeping the ham moist. They may cause crystals to form after the ham sits for a period after preparation. These white phosphates crystals are safe to eat.
